lotus and encinitas

today after yoga i was hungry.
and seeing that it was 11:30 and i wouldn't be leaving Encinitas till 4:00 i decided to
stop by one of my favorite cafe's and grab a bit to eat.

it's been ages. since i've set foot into Lotus.
conveniently located along side the 101.
This cafe offers vegetarian and vegan (and meat) sandwhichs, pastas, and other deli foods.

today i got the avacado haven sandwhich.
i asked for toasted bread as recommended by my friend dan...
silly me i don't really like toasted bread.
i always end up scraping the top of my mouth with its roughness.
however, it was raining and warm toasty bread sounded so good.
the warm bread was good.sandwich delicious but the roof of my mouth left with some battle wounds.

after lunch it was still raining
i was planning on taking another yoga class later so i had some time to kill
i went by the encinitas library to read my book.
(hands down the best library to cuddle up with hot chocolate to watch the rain fall over the ocean and enjoy a book.)

it was a lovely rainy afternoon.

i'm really starting to love Encinitas.
i'm thinking about making this little town home.

saying goodbye

your probably sick by now.
with my birthday posts.
but i have one last one for this year.
so my last stop for birthday celebration was with my family
at hacienda de vega in escondido.
(a picture from across the pond)
(me and my pops)

i've never been to this restraunt. but my dear friend chris suggested sometime ago that I try it out.
the place is so very lovely. there's a big pond and a waterfall.
it's very peaceful. i love the atmosphere and location.
tragically tho the food was only soso.
which is why i probably won't be coming back here again.

tonight i start my yoga certification course!!! i'm so excited. i'm not exactly sure what to expect. will we be doing yoga all night long? will it be more of a lecture?
what will the other yogi's in the class be like?

lost camera.

my camera battery died. which has ment a lack of new posts from me.
however. on july 13th i set out on a trip.
a trip that would reunite three of my greatest friends.
never would i have imagined when i meet these girls that they would become my best friends.
and that's exactly what they are.
we laugh together. yell at each other. sing together. have fun together.
dance together. cook together. and do random lame stuff together.
and we love every minute of it.

steph was getting married so we had an excuse to reunite in GEORGIA.
we climbed stone mt. floated the hooch. went boating on the lake. saw britney spears in concert. hung out with MLB
players and got free tickets to the game to watch them play.
(we ate lots of fried food.)
(hiked together.)
(this is stone mt. they have a laser show on the rock at night)
(got our nails did)
(verns house. saw my first fireflies here.)
(bachelorette party)
(shot my first gun. scary.)

my dear melissa young let us stay at her house.
she took us everywhere.
i'm extremely greateful for the kindness she showed me while i was there.
this is why i love her to pieces.
(coke factory)

i thought i loved hawaii and didn't ever want to leave it.
but truth was i loved sydney, melissa and stephanie so much.
i never wanted to leave them.
(aquarium)

and we decided that
it's offical.
we are just going to have to vacation together more often.

a new place in my heart

alright if you know me.
san diego is my town. and thus being said i've made it a point
to know all the greatest places to eat/visit while here in sd
and there's a new number one.

THE YELLOW DELI
(as well as the little yellow deli in valley center, yes valley center conveniently the city i work in.)

this deli really is paradise.
it's run by the people in the twelve tribes.
a religous organization that practices somewhat the law of consecration
no one has any money. no one gets paid but everyone is given necessities according to their needs.
they are some of the kindest people who you'll ever meet.
however it's not just the excellent service and exquisite hospitality that's got me hooked.

everything. i mean everything is delicious.
most of the food comes from their gardens and if not they still use all organic ingredients.
they bake their bread fresh daily.
also the building are so quaint and darling. there's folk music playing while you eat
your meal and sometime it's even live.
they have wood burning fires going from sundown to sun rise.
o and one more thing. the one in vista it's open 24/5 yep. 24 hours a day 5 days a week

i've never found anything quite like it.

sorry denny's and mexican food you've been replaced for those 5 days.
there's a new place in my heart.

taking my life to the next level.

taking my life to the next level.
at least in the kitchen.
i just bought one vitamix.

i bought this because when i'm at home.
making green smoothies and alkaline soups.
is just not very convenient.
my blender sucks.
crushing ice is a joke. and making a smoothie. i hope you like them chunky cause
that's also out of the question.

excitinggg.

salsa

right now i'm missing this:

BEST SALSA known to man.
i lived off of this and tortia chips in Hawaii.
if only they had this goodness
here. i've been trying to convince
smart and final to start carrying it.
we'll see what they do.

young

(vitamixs are the goddess of cleansing)

today i started a cleanse.
let's rewind to yesterday.
me and alma went hiking. like we do so often.
and adam young joined. us.
needless to say he's a bundle of fun. and i'm so grateful for his friendship for the past 5 years.

alma wanted to do a cleanse.
i had told her to talk to adam about it. he knows alll about cleanses.
so while hiking in the great outdoors it was decided that me and alma would start a cleanse
i would be alma's support and we'd take turns driving down to VC to get our ALAKINE on.

so today at 7:20 we headed down to RANCHO DEL SOL for morning yoga and our first green drink of the day alma enjoyed yoga not so much the salty green shake we had for breakfast. it was cute to see her face scrunch up. drinking a glass of blended greens and salt is about as fun as eating from BYU-Hawaii's caf. however, alma's experience reminded me of my first time. I hated it. but i knew it was good for me so with ALOT of fresh almond milk down it went. and now i'm in loveee. afterwards we ended up getting our blood tested. micheal tested mine. it was alot better than when i had a go around 2 years ago. still lots to imporve. i'm hoping this will help my stomach problems. i'm almost certain it will.

food fest

food fest.
it's one of my favorite BYU Hawaii activities
why?
because i love fijian curry and up until a year ago
it was the only place you could get it.

(one of the beloved islands of fiji)

now there's a fijian market/restaurant that sells it
(they claim to have the #1 fijian curry on the island. probably true seeing they are the ONLY one)

but then. i moved back home.
and i don't know of any fijian restaurants and to be honest even if i did
i probably wouldn't trust it.

(curry with roti. i think yes please.)

Luckily tho.
one of my friends married the guy who makes the curry for the fijian club every year. so i got the recipe. And today i made it. It took me about two hours. But the final results were magical. fijian curry that tasted like it was straight from fiji. I was happy with the results. and I was even more happy that the whole dish cost me $7.00 to make. $7.00 isn't even enough money to buy you a plate of curry back on the island.

go to bycook.blogspot.com for the recipe

sauces

something my dad pointed out while we were vacationing
i like sauces not food.
and i hate to admit it's really true.
it's hard for me to eat a sandwich/fries without them.
when i was little i wouldn't eat rice unless it had sauce on it.

here are some of my favorites:
chipotle sauce. subway has the best. i'm addicted.
BBQ sauce. ummm this can go anything. pizza. burgers. etc.

i need to ween my self off of this addiction.
cause honestly it can't be good.
from now on i'm not going to get extra sides of sauce.
let's see how i do.

chipotle chips

it's no secret.
i am in love with chipotle.

so when i passed these suckers in the foodland isle
to get chips for my homemade southwestern salsa aka marissa's salsa
I HADD to try them. plus they were being swindled at the rate of 2 for 6.
score some MORE. let me tell you.
i don't know of a more perfect chip.

something i don't really like to do..

maybe surprising.
maybe not
but i don't really like to try
new restraunts.

it doesn't mean that i don't do it
it's just something that i don't like to.
i get comfortable, like so many of us with what i
KNOW
That i just don't want to be disappointed
with what i don't know

so i have my favorites.
and true and loyal i go to the same places.
and order the same thing. time after time.
don't get me wronge it's delicous every time.
but i think i need to step out of this box i've drawn for myself.
i'm going to try and make a greater effort to try new eateries.
i'll tell you about them. and my experiences.
and maybee you'll find a new placee you too can enjoy.

(this was post was inspire from a trip with ashlynd and matt to a bakery.)

back home for the summer

i'm home! and i've been home for awhile now. my camera is still broken. : [ not too happy about that. but being home has been delightful. monday i got home at 10:00 and spent the next 3 hours unpacking. it felt so nice to be in my family's house. i love my room here. the next day was spent with the lil boy. we went to swam's cafe ate loveley vegitarian food. (after a year the boy has developed my liking towards vegies). we walked around the some little shops then found our selves in the self relazation gardens. these gardens are BEAUTIFUL and amazingly peaceful. full of exotic plants, koi fish, and over looks the beautiful california cost. if you have not been to these gardens i would definatly recommend a visit. they are located in/behind this aladin looking building.

tuesday was p90x work out day shopping with the mother and her friend followed by a birthday dinner for the lil boy with his family. vegan food. fun little place. the boy's present was explosions in the sky tickets for me and him later this month. thatt will be lots of funnners. today was the boys real birthday. we went on a picnic filled with jimbos cake and fire candles. (seriously 21 candles in a park during the summer in san diego is a definat fire hazard).
i love it here. i can tell it will be a wonderful summer.
even tho i love it in hawaii
and that's where all of my friends are
i didn't like being so far from boo bear.

my heart is happy to be here.

baddest

This time its baddest. like in that was the baddest kick flip i've every seen. okay maybe using baddest in terms of skate lingo was a little lame. (what with words like epic buttery and gnarly out there) but my BROTHER ANDERW is In towndizzle. today was full of pure tourism. stoping on the side of the road taking pictures with stuff around hawaii. We tried to go down to Pearl Harbor but there was a 2 and a half hour wait. YUCKKK. so we headed to costco and walmart to pick some stuff up on the way to the DOLE plantation. YUMMM PINEAPPLE ICECREAM. then we went to waimea to jump off the rock and gett TAN. which we were able to do BOTH. then to my favorite place in all of North Shore Haliewa Eats. Pinnapple Rice and Bancock Night Noodles. (Since living in Hawaii i have developed a love for Pineapple and I absolutly LOVE it in and on all of my foods.)

lovely faces
(in the eatery loving ipidizzlephoneforrizzle.)

p.s. for some reason pictures of me got taken on my camera and pictures of andrew got taken on his camera.... pictures will be posted soon of the brudda in Hawaii.

blessed sunshine : )

starving and subway.

alright if you know me at all or read my blogs you would know that I LOVE subway. and i visit this wonderful establishment once a week. well this week has been a crazy week with two ten page essays and a 3 page essay. book of mormon final and a stats final coming up on saturday. so after completion of my last essay i decided that i would reward myself for my hard work. so i was going to go to subway around 10 o clock. well i realized that i didn't have my wallet so i biked home... well i couldn't find my wallet anywhere. i was starving and very frustrated. i thought to myself it's probably in abby's car. being upset that i would not have subway anytime soon i ate a skinny cow sandwhich. it helped a little. i was determined to get subway tho and i still had my check book so it was off to the cashiers office to cash a check. cashing the check went fine but i had an appointment at the reading writing center. so subway was going to have to wait. as i walked to the rwc. i passed the testing center. guess who walked out...abby. i talked to her about my wallet and she said... "o yeah it is in my car, i thought about taking it in but i forgot." ermph..... o wells what can you do. after my appointment i got my subway and it was delicious at only 5 dollars (used to be the hawaii price of 5.99)

& i got to lay out at the beach.... i don't think today could have gotten any better.

rainnn

rain, rain go away come again some other day... this rain is killing my plans for being tan when i come home. it rained on monday and again today. hopefully we have sun tomorrow through friday. checking the weather doesn't do much good..

four more days till i step onto a 5 hour plan trip. my insides are goinggg bananas with excitement. i'm looking forward to cheap food prices. driving. mothers cooking. good tasting produce. how i took all this for granted before me leaving home.i've been living like a starving college student lately.. when i mean lately i mean the past week and half because i know i'm going home and i don't want to buy any food because i know i won't eat it all before i go home and i know it'll all go bad before i eat it. so here's a funny story about taking every opportunity to get some free food:

whitney: what are you up to tonight
me: i'm going to the exercise club's closing social
whitney: hmm i didn't know you were in the exercise club
me: o i'm not, but i get their e-mails and they are having pizza tonight so i'm going.
laughter from both of us.

i'm really excited for the pizza. i realized i haven't had any since the 2nd week of being here. and this time it's free. all the better.

crummy day.

today was one of those o so very crummy days. days where you wish you could have just slept through the whole day. woke up and the sun looked like it was making a fight to come through. kept my fingers crossed for it clearing up. but with my horribly day luck it did not. there was no point in staying around laie this saturday so me and whitney rode up to north shore to get some thai food at haliewa eats.

(me and whitney outside the eatery)

(chopsticks.)

me and whit each got something then spilt them. o my fried pineapple rice with chicken is absolutely one of my new favorite dishes. i'm going to have to learn how to make it. we stopped by the chocolate gecko and picked up my favorite mix of chocolate. hazelnut and chocolate truffles. : ]

Arriving back in Laie it was pouring down rain. yuckers. it was nice that we avoided some rain up on north shore. then it was studying researching for my finals and feeling terrible miserable... i can't wait till i'm at my parents house with family around me. this week is going to suck waiting for friday to come so i can be taken away to my purple/lavender room that is decorated for a 9 year old.

till them my heart and mind feel like: garrr.err.whatt??errr.escondido please.i can't stand this much longer.

facebook. cravings. & cooking.

i have decided that i spend way to much time on facebook. not so much the internet but facebook. and it's starting to annoy me. usually facebook goes along with the mellow dramatic voice of norm. norm chatting away in the back ground while i chat and look at pictures and write on walls. well i find this a complete waste of time, but for some reason i find it a completely enjoyable thing to do to past the time in between classes. so i have decided to make facebook a weekend website.

so this whole week i have been craving a guacamole burger. the only problem is that the only guacomole burger place is in haliawa a whole 30 to 40 minute drive from my house. seeing that i have no car. this makes things a little difficult. well i realized i have costco guacamole that is soo very good. i decided that hey i'll go to food land and buy all the stuff to make a burger. i spend 15 dollars on meat, cheese, and buns and curly fries. (a burger meal is not complete without fries.) not bad considering one burger at the burger place is 13 dollars. and all the stuff that i bought would make around 6 burgers.

let me tell you. what i made. was impossible amazing. from the moment the burger hit my mouth i was shot into a state of complete extacy. you have to understand i have lived most of my life under the notion that i can not cook. but wowzzers i can cook. and this amazing burger was most defiantly on the equal level of top burgers ever eaten. i am for sure going to start cooking more. there hasn't been one thing that i have made that has turned out alright. it's all been amazing.

well it's about time i get to ssome avoided homework.
